Theo and his brother Milo hated broccoli when they were kids, but their mother was determined to put it in their diet because of its health benefits. She created a cheesy broccoli casserole that both boys loved. When Theo came up with the idea to use reality TV as a way to get people to read more he likened it to the same devious technique his mother used: the reality TV show format would be the buttery, cheesy, fattening, high sodium topping that no one could resist and wasn’t good for them and he and his message about books . . . would be the broccoli.
One to two bunches broccoli, chopped into large pieces
1 stick butter, melted
1 envelope onion soup mix
Juice of 1 lemon
Grated cheddar to cover, approximately 2 C
Steam broccoli until desire doneness. Drain and place in 9×9 or 2-quart baking dish or casserole; cover with melted butter, then onion soup mix, then lemon juice. Top with cheese and put under broiler until cheese melts, several minutes.
